The Traditional Balsamic Vinegar of Reggio Emilia PDO Gold is taken from cooked must of two different types of grapes from vineyards of Emilia, Trebbiano and Spergola, left to ferment, oxidize and age in the shadow of the floors of the vinegar of Ferrarini properties. In this patient process, which lasts at least 25 years, under the expert care of a master, the must taste merges with the barrel of juniper, black locust and chestnut tree in which it is kept. Is this art and nature meet the secret of a recognized and respected goodness among gems of Italian gastronomy.
The Traditional Balsamic Vinegar DOP Gold is perfect over important cheeses, first of all the Parmigiano Reggiano, or as a dessert joined berries, strawberries and ice cream. For connoisseurs, a real elixir to be enjoyed in a small glass after a meal.
