Perciatelloni are a specialty of the Campania region. These are long pasta rods with a round hollow section with a 3,3 mm diameter and a thickness between 1,00 and 1,10 mm. Perciatelloni are traditionally served with either a "alla napoletana" or a "guardaporta" ragù and the Naples ragù, also known as "alla genovese". At their best with addition of Parmesan or pecorino cheese or with tomato and vegetable, with aubergins and peppers, sauces.
